Warm Petite Medley Potato Salad Recipe

• 1 bag (1.5 pound) petite medley potatoes

• 3 slices bacon

• 1 shallot, minced

• 1 Tbsp maple syrup

• 2 tsp whole grain mustard

• 1/2 tsp kosher salt

• 1/2 tsp black pepper

• 2 Tbsp red wine vinegar

• 1/4 cup parsley, chopped


1. Microwave potatoes according to package directions. When cool enough to handle, slice potatoes in half.

2. Meanwhile, fry bacon in a skillet over medium heat until crisp. Remove bacon from pan, crumble into pieces and set aside. Do not discard bacon grease. Add shallot to pan and sauté until softened. Remove from heat and whisk in maple syrup, mustard, salt, pepper, and red wine vinegar.

3. Stir in cooked potatoes and garnish with parsley and crumbled bacon. Serve immediately.
