Delicious Savory Mushroom Toast Recipe – Basket & Bushel

• ½ cup whole milk ricotta cheese

• ¼ cup grated Parmesan cheese

• Zest and juice of ½ lemon

• Kosher salt and black pepper to taste

• 4 wide slices of artisan bread (½-inch thick), toasted and warm

• Fresh Italian parsley, chopped

• 2 T. butter

• 1 lb. Basket & Bushel white mushrooms, cleaned and thinly sliced

• 2 cloves garlic, minced

• 2 tsp. fresh thyme leaves

• 1 tsp. crushed red pepper flakes (optional)

• Kosher salt and black pepper to taste


1. In a small bowl, stir together the ricotta, Parmesan, lemon zest and juice. Taste and season with salt and pepper; set aside.

2. Heat a large skillet over medium-high heat and add butter. When butter begins to sizzle, add the mushrooms. Cook, stirring until lightly browned 6-8 minutes.

3. Add the garlic, thyme leaves, and crushed red pepper flakes if desired. Cook for an additional minute. Taste and season with salt and pepper.

4. To assemble the mushroom toast, spread the ricotta mixture over each slice of toasted bread. Top with generous amounts of sauteed mushrooms and garnish with parsley. Serve while warm.

5. Options: For creamier mushrooms, add 2 T. heavy cream near the end of cooking process. You can drizzle with a purchased balsamic glaze after assembly for additional flavor. As a breakfast option, stir in fresh arugula into the mushrooms, and top with a fried egg.
