Shelby Rogers’ Favorite Goat Cheese Zucchini Bake

Serves: 2 to 4
Ingredients:
• 1 Large Zucchini, halved lengthwise
• 1 Tbsp. Olive Oil
• 1 oz. Goat Cheese
• Salt and Pepper
Method:
1. Preheat oven to 400˚F. With the tip of a knife, score zucchini halves in a crosshatch pattern, sprinkle with salt, and wait at least 5 minutes before cooking.
2. Over medium heat, add oil to a large oven-proof pan. Pat zucchini dry and place cut-side down in the pan. Cook for about 2-3 minutes per side until browned and beginning to soften.
3. Transfer pan to preheated oven and bake another 5-10 minutes until desired doneness.
4. Remove from oven, season with salt and pepper, and sprinkle with goat cheese. Serve as a side dish or appetizer.
