Grilled Shrimp and Snap Pea Salad Recipe

Ingredients:

• 1 pound shrimp, shelled and deveined

• 1 tablespoon olive oil

• 1/2 teaspoon garlic powder

• 1/2 teaspoon salt

• 1/4 teaspoon freshly ground pepper

• 1 (15-ounce) bag Bushel & Basket Sugar Snap Peas, trimmed and halved

• 1 medium Granny Smith apple, cored and thinly sliced

• 1/2 English cucumber, thinly sliced

• 1/2 medium red onion, thinly sliced

• 1 bunch radishes, trimmed and thinly sliced

• 3 tablespoons lemon juice

• 1 garlic clove, minced

• 1 tablespoon chopped fresh mint leaves

• 1 tablespoon chopped fresh parsley

• 1/2 teaspoon salt

• 1/4 teaspoon freshly ground pepper

• 1/2 cup extra-virgin olive oil

Method:

1. Preheat grill or grill pan to medium-high heat.

2. Mix shrimp, olive oil, garlic powder, salt, and pepper in a large bowl.

3. Place shrimp directly onto the grill and cook for 1-2 minutes on each side, or until opaque and cooked through.

4. Toss together the sugar snap peas, apple, English cucumber, red onion, and radishes in a large serving bowl. Add grilled shrimp.

5. Whisk together lemon juice, garlic, mint, parsley, salt, and pepper. Drizzle in olive oil while whisking. Pour the dressing over the salad and toss to combine.
