Blackberry Panna Cotta Recipe

Ingredients:

• 1 (0.25-ounce) envelope unflavored powdered gelatin

• 1/4 cup cold water

• 2 cups heavy cream

• 1/2 cup whole milk

• 1/2 cup granulated sugar

• 1 1/2 teaspoons vanilla extract

• 2 cups Basket & Bushel Blackberries, plus more for garnish

• 1 tablespoon fresh lemon juice

• 1/3 cup granulated sugar

• Fresh mint (optional)

Method:

1. Sprinkle the gelatin evenly over the water. Set aside to soften for about 10 minutes.

2. Meanwhile, mix heavy cream, whole milk, sugar, and vanilla in a medium saucepan over medium heat. Bring the cream mixture to a simmer, until sugar dissolves. Remove from heat and whisk in the softened gelatin until fully dissolved.

3. Divide panna cotta between serving bowls or ramekins and allow to chill at least 4 hours, or overnight, until set.

4. Heat the blackberries, lemon juice and sugar in a medium saucepan over medium heat. Bring to a boil and reduce heat to a simmer. Cook for 10 minutes, stirring frequently, or until slightly thickened. Allow to cool to room temperature and serve over panna cotta. Garnish with blackberries and fresh mint, if desired.
