Fuel your day with this vibrant Roasted Carrot & Cauliflower Bowl 🥕🌱✨ Recipe below ⬇️
For Pesto Vinaigrette:
- 1/2 cup of packed fresh basil leaves
- 2 tablespoons pine nuts, toasted
- 2 garlic cloves, chopped
- 1/2 cup of extra virgin olive oil
- 1 lemon, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
For Roasted Carrot & Cauliflower Bowl
- 1 (10-ounce) bag cauliflower florets
- 3 carrots, peeled and cut into 1/2-inch pieces
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- Freshly ground pepper, to taste
- 2 cups cooked quinoa
- 1 (15-ounce) can of chickpeas, rinsed and drained
- 1/2 cup goat cheese
- 1 ripe avocado, thinly sliced
- 2 green onions, thinly sliced
Instructions:
Pesto Vinaigrette:
1. In a food processor, pulse basil, pine nuts, and garlic until chopped.
2. With the machine running, drizzle in olive oil and lemon juice until smooth.
3. Season with salt and pepper to taste.
For Roasted Carrot & Cauliflower Bowl:
1. Preheat oven to 400°F.
2. Toss cauliflower, carrots, olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender.
3. Divide quinoa into 4 bowls. Top with roasted veggies, chickpeas, goat cheese, avocado, and green onions. Drizzle with pesto vinaigrette & serve.
